Vampire Cabernet Sauvignon is sourced from several small-berry clones of this traditional Bordeaux varietal, grown in the Paso Robles region of California’s Central Coast.  An extended growing season, with sunny, moderate daytime temperatures, along with cool summer nights, allows ideal fruit development at this site.  Well-drained soils, rich in maritime fossils, add uniquely aromatic components to this fruit-forward wine.

Classic, small-lot fermentations, followed by aging with both European and American oak, gives full expression to the rich varietal flavors in this wine.  Judiciously blended with small amounts of Merlot for softness, and Syrah for added structure, our Cabernet displays ripe flavor character and a lovely aroma that will continue to develop with additional time in bottle.

Ideal for grilled steaks and chops, or with rich red pasta dishes, our Cabernet Sauvignon is well-suited for the table, and is a wonderful complement to any fine meal.

This bottle posseses the hallmark characteristic of the Cabernet variety, a wild spicy nose with bell pepper tones that the French call "Sauvage." Intensely dark purple in color, this full bodied wine has a rich fruit flavor and complex oak structure. Vampire Cabernet is a well made, modern example of the "king" of red wines, with fine tannins and a mixture of 70% French and 30% American oak. This wine has been put through a longer than normal macceration period in anaerobic conditions and at al lower temperature to extract maximum fruit intensity and structure from the ripe grapes. Only the free run juice of the grapes was selected for this wine — the wine resulting from the press was separated and used elsewhere, creating a soft wine without the harsh tannins which are contained in the skins and seeds of the grapes which are crushed during pressing.
